Assamese Style Jute Leaves Fritters ( Mora Xaakor Bor)

  Jute  is an edible leafy vegetable, rich in vitamins and fiber. Jute in  Assamese  called Mora xaak .   Jute leaves can be added in lentil soup. I add knotted jute leaves in lentil curry. Capsicum Fritters | Bell Pepper Fritters

  Capsicum also known as bell pepper  available in red, yellow and green colours are cultivated worldwide and used in many cuisines. Capsicum can be eaten raw and cooked. It can be stir fried, stuffed and roasted. Capsicum fritters are very tasty and very easy to prepare. Pieces of capsicum are dipped into a spicy chickpea batter and then fried till golden brown or till crisp. Capsicum fritters can be served as a snack or as a side dish with rice in lunch or dinner.  Beside taste capsicum is a great source of fiber, vitamin A, vitamin C, manganese and potassium. Malabar Spinach Leaves Fritters | Puroi Xaakor Bor

  Malabar spinach ( puroi xaak /পূৰৈ শাক) has two varieties - green and red. The red one is known as basella alba or ruba. Malabar spinach has fleshy and thick leaves. It's steams are very soft. Malabar spinach are used as a vegetable in Indian cuisine.  Also check :Stir fried Malabar spinach Malabar spinach leaves fritters are very tasty fritters which can be served as a snack or as a side dish with steamed rice. The fleshy thick malabar spinach leaves are dipped into a spicy chickpea batter and then fried till golden brown or till crisp in oil. Night Flowering Jasmine Leaves Fritters | Assamese Xewali Pator Bor

Night flowering jasmine plant or xewali / sewali is a small tree with long hairy leaves. The flowers are fragrant and white in colour with orange-red centre. Night jasmine flowering plant is a medicinal plant. Its flowers and leaves are used to cure many diseases in Ayurveda.  Night jasmine flowers and leaves has a bitter taste. Kumro Patay Bora / Rongalau Pator Bor (Pumpkin Leaves Fritters)

Kumro patay bora is a Bengali style pumpkin leaves fritters stuffed with spicy potato stuffing and wrapped in tender pumpkin leaves. Dipped into batter and fried into crispy golden brown from outside and soft juicy inside. It's raining today and I decided to make rongalau pator bor. So I asked my husband to pluck some tender pumpkin leaves from our kitchen garden. Immediately I  prepared the fritters together with a mixed vegetables sabji and served in dinner with rice.  And believe me the pumpkin leaves fritters were really yummy. Neem Leaves Fritters

Do you love to eat bitter food. Well for many it's very hard to swallow bitter food.  Azadirachta indica , most commonly known as neem tree has lots of medicinal value. It's leaves has a bitter taste and has been used in Ayurveda from ancient times in India. Neem leaves has anti bacterial properties which can help in many skin problems. Fresh neem leaves paste can be used in treating few skin problems like insect bites, pimples, itching etc. Like other bitter food, neem leaf is also good for liver function. You can chew neem leaf raw or by stir frying.  But if you make fitters of neem leaves by dipping into a batter and then frying on hot oil,  you'll not find it too bitter . Skunk vine Fritters / Bhedai lotar bor

Bhedai lota  (in Assamese ) or  Skunk vine   is a green leafy vegetable found in  Assam . The tree is a climber.  It has many medicinal value. But it's leaves give a distinctive odour when crushed.  Yes, it is edible. After cooking it's odour extinguished. Bor  or  fritters  are fried food generally consists of chickpea flour or any other flour together with different chopped vegetables. In Assamese cuisine bor is generally served as a side dish with rice. But bor or fritters are good to eat with a hot cup of tea during rainy season. In Assamese cuisine, bor is generally served as a side dish with rice. But bor or fritters are good to eat with a hot cup of tea during rainy season.
