Kumol Saul Jolpan

Assam soft rice or Kumol saul is instant soft rice that requires no cooking. Kumol saul is a glutinous rice found in Assam which is pre cooked and sun dried. It is also known as magic rice as it can be prepared in minutes by just soaking in water. Kumol saul is mostly served with boiled milk or curd , banana and jaggery. Although it's a breakfast recipe but kumol saul jolpan is also served to guests specially during bihu festivals. This Assam soft rice or Kumol saul got geographical indications (GI) tag in the year 2018.   Jolpan is an Assamese word which means snacks which are often served in breakfast. Poita Bhat | Paani Bhat | Watered Rice : The smart solution for leftover rice (with instant poita bhat recipe)

Assamese call it poita bhat , Bengalis call ponta bhat , pakhala in Odisha, geel bhat in Bihar, pazhankanji in Kerela and palaya sadam or palayathu or neeragaram in South India. Known by different names in different regions in the Indian subcontinent, fermented rice is a dish consumed by different communities of India in their own style since ancient times. The leftover cooked rice is soaked in water for overnight for fermentation. The next day it is served in  breakfast.  Traditionally Assamese poita bhat is served with mashed potato ( aloo pitika) or mashed grilled fish ( pura masor pitika) .The fermented rice is served in bell metal bowl and little raw mustard oil,  chopped chillies, chopped onions, few drops of lemon juice and pinch of salt is added to it before serving. Assamese Anguli Pitha Recipe

Anguli pitha is a finger shaped recipe made from rice flour.  The Assamese word 'anguli' means fingers and 'pitha' is a type of rice cake. It's an Assamese style recipe that can be served as breakfast(jolpan) or as a snack with the evening cup of tea. Roselle (টেঙামৰা)  or Hibiscus is used in Assamese cuisine to make fish curries and sour lentil curries. Both roselle leaves and fruits are used for this purpose. Assamese Doi Chira Jolpan Recipe

Assamese Jolpan recipes are generally breakfast recipes which requires no cooking and can be prepared in no time.  These jolpan recipes are not only served as breakfast but can also be served to guests specially in the time of Bihu festivities. Jolpan recipes usually consists of various forms of rice like rice flakes (chira), puffed rice(muri/hurung/akhoi), handoh(roasted and grounded rice),  Soft rice(kumol saul) etc.  These rice varieties are served with curd/yougurt(doi), and jaggery(gur) to make jolpan . Use either cow curd or buffalo curd. You can also use curd prepared in bamboo hollow. But serve Assamese jolpan only on bell metal(kahor) bowl because it is a tradition. Upma is a South Indian dish. Vermicelli  (in Assamese savyoi) upma is a very tasty recipe.  It can be served as a breakfast dish but I like to have it in the evening with a cup of tea.
